Tasting Note
A rare red variety in the Barossa, our Rosé crafted from the Spanish varietal Graciano, was born from a twist of fate. The neighbouring grower lost his corporate supply contract just days before picking, leaving him without a home for his Graciano grapes. So, as a bit of a favor, I took them in. Turns out, Graciano is quite the interesting grape! Its super concentrated skin color and naturally high tannins, that throws a wrench in trying to make a lightly colored Rosé. Its natural acidity however and alluring Mulberry musk notes compelled us to treat it gently, to craft a salmon-hued, dry and mouth-watering wine. Colour: Pale salmon. Aroma: Rose petal, red apple skin and musk. Palate: Wild strawberry, watermelon and pink lady apple. Food Pairing: Antipasto, sashimi or sushi rolls.
